    Well Brooke is hitting the ground running trying to make the best of her new start up in Montana. She just signed the lease on a beautiful two bedroom apartment in Kalispell. Not only does she get to have her own garden plot and a kitty cat, her nurse is also trying to hook her up with a scholarship for a gym membership. All good things! Brooke has also been witness to the existence of much wildlife no less than a mama black bear with three cubs, dozens of wild turkeys, a few gardener snakes, baby fawns as well as bucks and does.

    Gardening is definitely a new one for the Trout. So far she has peeled carrots, pared apples, cut zucchini, hulled strawberries, pitted cherries, picked huckleberries and raspberries. In return she has recieved carrot cake, zucchini brownies, apple pie, cherry pie, raspberry rhubarb pudding cake, huckleberry cheesecake, huckleberry milkshakes, huckleberry pancakes, angel food cake with strawberries, pound cake with strawberries and strawberry smoothies.

    One of the more unusual delights Brooke has recently consumed has been sorrel soup, a German delicacy that is citrus flavored in nature. Other items of consumption have included a variety of canned delights including homemade seriously juicy dill pickles, dill green beans and pickled beats. Also on the menu have been squash 100 ways; like zucchini bread with butter, fried squash blossoms stuffed with ricotta and mozarella, zucchini fritters with cheese sauce, zucchini soup with bacon and aforementioned zucchini brownies. Have you ever had one? Well now is your chance!

    Zucchini Brownies
    1 1/4 cup sugar
    1/2 cup oil
    1 egg
    2 tsp vanilla extract
    2 cups flour
    1 1/2 tsp baking soda
    1/2 cup cocoa
    2 cups grated zuchinni
    1/2 cup nuts (optional)
    1/2 cup chocolate chips

    Grease and flour a 9X13 pan. Mix all ingredients and put in this pan. Bake at 350 degrees for 25 minutes.

    PS: Brooke’s personal secret for any time she makes a dessert is to reduce the sugar by half and then split the remainder half and half with brown sugar which she feel gives it more depth of flavor and is somewhat healthier too. So for this recipe Brooke would round it out and use roughly 1/4 cup of brown sugar and 1/4 cup regular sugar. Also for this recipe you could use whatever type of chocolate chip you like but Trout’s preference is dark!

    The end result of this recipe is a cake like brownie that is extremely moist. Brooke has recieved nothing but rave reviews for these brownies at any potluck she has brought them to. Enjoy!! 🙂
